Side note : A Quick Back to School Dinner


It's almost that time, or perhaps it already is that time, summer is ending and school is right around the corner. For us, not much will change, Max is in preschool year round, but for many families school can mean busier days and less time for the good stuff, like cooking. So I've decided to post a few quick dinners for you every now and again, to pass along some quick and easy fixes that work for us, in hopes that they might work for you too.

Here's one we had tonight...

Zucchini, Corn and Feta Pizza


ingredients:
one ear of corn
half a red onion
one zucchini
block of feta cheese
olive oil
mozzarella/parmesan
naan (or flat bread)

get to work:
1. Heat the oven to 350 degrees. 

2. On a cookie sheet place the naan (flat bread) and lightly coat it with the olive oil. 

3. Cut the corn off the ear and chop the onion and zucchini into long thin pieces. 

4. Spread the vegetables over the naan. 

5. Cover with as much cheese as desired. 

6. Bake for 10 min. (or until cheese has melted)


*alternatives:
  • Add some cilantro to the mix and squeeze a little bit of lime juice over the pizza once it's fresh out of the oven. (This is Cheeseboard style - a Berkeley favorite)
  • Top with precooked chicken sausages. We love Aidells, not sure if they're exclusive to California, but you can order them online!
