cooking with kids


Hanukkah is almost here and this year we've been invited to a latke party at my coworker's house. Have you had a latke? Have you had a sweet potato latke? Mmmm, my mouth waters at the very thought. What goes better with latkes, aside from sour cream, but applesauce?

Applesauce is simple and easy to make and a great cooking with kids project. Most older 3-4 year olds, should be able to use an apple cutter with adult supervision. (We use it all the time at work, and so far they all still have their fingers!).

Here are two applesauce recipes for you to try out:




Slow Cooker Applesauce

Ingredients:
12 cups apple
1/2 cup water1 tbsp boiled cider, (optional)2 tsp ground cinnamon1/2 cup granulated sugar


Peel, core and chop apples. Add all ingredients to slow cooker. Toss gently and cover. Cook on high for 3 hours or low for 6. Mash with a potato masher to desired consistency.



Stove Top Applesauce

Ingredients:
5 large apples (about 3 pounds)1/4 cup dark brown sugar 1 tablespoon lemon juice2 cinnamon sticks1/2 cup water 1/4 teaspoon salt

Peel, core and cut up the apples. Put them in a large, heavy pan with the other ingredients and bring to a boil. Lower to a simmer and cover tightly. Let simmer for about 30 minutes or until soft. If it's too watery, leave the lid off for a few minutes to let it reduce.Remove the cinnamon sticks. If you want smooth applesauce, puree in a food processor or with an immersion blender. Otherwise, just mash with a fork.
