Homemade Mint Lemonade

Oh Spring has hit the Bay Area and the weather has been absolutely delightful! All I want to do is lounge outside on the patio, read a book and sip sweet lemonade. While this fantasy has yet to become reality, I have discovered a tasty lemonade recipe that I thought I'd share with you. It's easy enough to make with a toddler, I promise.

ingredients:
lemons (enough for 1/3 cup of juice)
1/2 cup of mint
1/3 cup honey
2 cups boiling water
1 1/2 cup cold water
materials:
pot
hand juicer
knife
pitcher
cups
get to work:
1. Measure out the mint and honey. Have your child help you pour them into a pot.
2. Boil 2 cups of water and then pour it over the mint and honey. Let steep for about 30 min.
3. Cut the lemons in half and set up the juicer. Show your child how to juice the lemons by pressing them down and twisting them.
4. Once 30 min. has past, strain the mint and honey water into a large pitcher. Press on the mint to squeeze out any extra liquids.
5. Combine the lemon juice and cold water into the pitcher and stir. (Should make about 4 cups).
PS
You can make bird feeders with the left over lemon halves!
