Plum Cake is one of my absolute favorite desserts. Not only is it delicious, it's easy to make and looks quite lovely without much work. For this recipe, I combined Yogurt Cake, one of Max's favorites, with my Plum Cake to make a nice little Easter dessert.

ingredients:
4 ripe plums, cut into wedges
1 1/4 cup sugar plus another 1/4 cup sugar
1 tbs butter
1/2 cups full-fat yogurt
2/3 cup olive oil3 eggs1 teaspoon vanilla2 1/2 cups all-purpose floura2 1/2 teaspoons baking powder3/4 teaspoon baking soda1/2 teaspoon saltPinch freshly ground nutmeg
1. Heat the oven to 350 and butter and then line an 9 inch pan with parchment paper.
2. Melt 1 tbs of butter in a sauce pan on medium low. Add 1/4 cup sugar (you can use less sugar if you'd like). Once melted, add the plum wedges and stir, coating each piece with sugar and butter for about 3 minutes.
3. Line the bottom of the pan with the plum wedges.
4. In a mixing bowl combine yogurt, olive oil, sugar, eggs and vanilla.
5. Add flour, baking powder, baking soda, salt and nutmeg to the yogurt mixture.
6. Pour the batter into the pan and bake for about 50 minutes.
7. Remove from oven and let cool to room temperature. Flip over onto a plate, eat and enjoy!
Max is always up for making yogurt cake, although that
2 year old smile is starting to feel a bit forced.
